I enjoyed the last long weekend. All of siblings were present in Casa Mendiola. Even my niece Nikki and Ate Jhack, a very close friend of the family. And all of us present only means one thing, Food Trip!!!! =D
Unfortunately, since I was busy with the videoke with my mom and Nikki, I wasn't able to learn and take the picture of my sister Fay's Genuine Pinakbet and Inihaw na Bangus. Even my Ensaladang Talong Delicioso. It was like taken by a Tsunami. It was totally consumed as soon as it was set on the table!
But there's always a next time. =D
So a day after, before going back to reality as the long weekend ends, we all had lunch together with the family favorite, Bangus Sisig!
Bangus Sisig, cannot be categorized as Guilt Free dish, like what restos say about it. Healthy? As if?
It was cooked with Butter and battered with lots of Mayo Whip. Now how can that be Guilt Free? But of course it is much better than having the Tenga ng Baboy. Bam!
But its so yummy, i cannot resist, especially if you'll have it like a rice toppings with blanched pechay in sesame oil. Sweet, chilly, fruity and spicy all in one dish....Wow! Yumminezz!
Maybe we can serve this on Yael's Christening. =D Perfect appetizer for the ninong and ninang! =D

Midnight Delights
Just want to share my favorite midnight snack. Since I'm breastfeeding, I get these krug krug in my stomach in the middle of the night. And they say its bad to nurse when you're hungry or the baby will experience diarrhea. Well, I really have to eat for me to produce milk. And my favorite hunger reliever?

Chocomocha is a combination of milo and coffee. Once sachet of Milo and one spoon of 3 in 1 coffee. Its my favorite drink ever. My whole day is not complete without it. My average number of cups per day is around 2-3. Yes, that's how I love it. I like it hot since its my perk up drink. The warmth calms my tummy.
And my chocomocha is perfect with muffins. We have a stock of these babies in our food box. I love Banana Choco. There are real chunks of banana and chocolate. Baked moist, its happiness in a pack! The flavor is just perfect. But the chocolate flavor also makes my taste buds in a party mode. Blueberry is yummy but Banana Choco is my number one. I think they also got mango flavor but I haven't tried it yet.
There goes my midnight delight. I am supposed to take a picture of the muffin per se but before I realize it, its gone! Hahahahha...
You should try it yourself. Its a guaranteed yumminezz!

Adding Hotdogs to this dish would be great to meet the family's eating volume rather than relying all of it to the chicken meat. Especially in our family whose members are mostly men. Vegetables even cost double nowadays. And after typhoon Helen affecting Benguet and other Northern key areas, I dont think there would be a price turn around soon.

First Two Lions
Four out of ten members in our family celebrate their birthdays in August. The first two happened last August 3 and 4, for Gab and Kuya Glenn. My nephew and brother-in-law.
Since it was Kuya Glenn's 40th birthday, his wife Fay decided to cook for the first two lions. And their friends are coming over. Unfortunately, due to heavy rains and bad weather, only few were able to come.

July Birthday Feast

My Mom, brother Ram and my hubby Raymond, all celebrate their birthdays in the month of July. But since my mom was in the Pre-Operation ward during her birthday last July 7 for her gall-stone removal, we just paid her a visit in the Veterans Hospital with pancit, kutsinta and cake courtesy of our cousin, Ate Merlyn.
After her operation, my mom decided to have a simple family gathering as Thanksgiving for the success of her operation. And we all decided to spend it on Mhon's birthday, last July 22. It will also serve as the full blast birthday celebration of the July celebrants in the family, since we haven't celebrated Ram's birthday either due to working time conflicts. As always, my Valdeztamon Family were there. Of course, the Kuya in the family is the celebrant.
And it was a full blast indeed! It was a splurge that I didn't know which dish should I try first!
So I pick those I didn't cook. The Pancit cooked by my sister Fay, Lumpiang Hubad the specialty of Nanay (my mom-in-law) and the Home-made Siomai of my sister-in-law, Rhen. I have to admit. I eat a lot of this bunch that I no longer have space left in my stomach to munch on the other dishes. I had to wait for another two hours to vacate my stomach!

I made the desserts myself. My husband prefer that I prepare his birthday cakes than buying from bake shops. Though I have never baked a cake for him ever. I can only make refrigerator cakes. =D And that's my work of love.

Although I must say, the cake I made for the Baby Shower of my youngest child taste much better for me. I used fresh mangoes last Baby Shower. This time, I only used canned fruitcocktails due to time constraints. Its hard to go out and look for ripe mangoes with my infant. Nonetheless, it served its purpose. Blowing of candle after the birthday song! =D

One of the box office on the menu is Ate Fay's Fried Chicken. It was juicy yet crunchy and oh so yummy! Its so good, you dont need gravy anymore.

The shrimp even lasted for two more days before it became a total memory. Definitely, it was a birthday feast with guaranteed yumminezz!

Maki Night
We had a bag of Japanese Rice that has been stuck in our food storage for few weeks already, so my sister Fay and I thought of making Maki. But it's going to be a Maki with a Twist. A Filipino Twist. And this recipe has been lingering in Ate Fay's head for more than a week so we decided to make it a reality.
Tinapa (smoked fish) is a classic comfort food for every Filipino. For just 20 pesos, you can have a pack of this dish, ready to be fried. And of course what else would the perfect partner for Tinapa, tomato and salted eggs! With a vinegar and garlic dip! Aaaaahhh.... Yumminezz!!!!!
And that is our Maki with a Filipino twist. Instead of the usual crab meat, mango and cucumber, it will be filled with tinapa, tomato and salted eggs!
Here's how it looks before rolling. Its so tempting, I need to use all of my will power not to eat everything or else, there'd be no left to use for filling!
My mom in law asked me if its okay to use rice we usually have here like Dinorado. We have never tried that before. It is fragrant like Japanese rice, but it may not hold as tight as the Japanese rice. We don't want the Maki to fall off before it gets into our mouth, right?
Here's the first roll. The aroma of the Nori Paper (Seaweed Paper) makes me drool more over this roll.
And this is how it looks like once sliced. So pretty! I had to stop myself from picking for tasting since I got to make this shot first.
We were able to make six rolls out of two cups of rice. Its been years since the last time I made Maki. I still need to work on the size of each Maki. We figured, its better if we put lesser rice on the roll so the fillings won't be overpowered to get that party in the mouth experience. =)
We were so happy with the results. Tinapa Maki is a Success with a capital S! You will never go wrong with Tinapa, Tomatoes and Salted Eggs! We also made the dip vinegar with garlic. It's a Yummy Mouthful!
Cooking and eating are one of the things my sister and I do for bonding. As always, it was a experience to treasure not only in my mind, but in my tummy as well! =) It was pure delight for my taste buds. Definitely, this would be another dish to be included in our list of menu. Its affordable and delicious enough to be served for our events in Casa Mendiola.
So, my friends, watch out for that Tinapa Maki experience.

Combolicious
Its been raining heavily for almost a week now. Memories of Ondoy last 2009 came rushing in my mind. The scenarios in TV reminded me of that traumatic experience. Good thing, we are no longer staying at San Mateo, Rizal. And I prayed for those deeply affected. I know how hard their situation is and the devastation they are going through.
Last Wednesday, the government had announced class suspension to all levels. Luckily, we were one of the areas unaffected by the great monsoon. But since all the highways surrounding our area were not passable due to high flood, my husband and siblings were not able to go to office either. We all opted to stay home to keep safe.
And since we're all at home in the middle of a cold weather, my sister and I decided to cook arrozcaldo and deep fried tofu. Its the perfect meal for the rainy season since most of us in the family are now experiencing colds and flu.
We put five cups of rice and the chicken breasts in a big cooking pot. We are a family with nine members, majority of big men, and it all fed us from lunch until dinner. Just five cups of rice and it was enough to feed us all for the whole day. It reminded us of Lugaw All You Can in PUP. =D I was amazed of how much you can make with five cups for a rice porridge. Maybe that is why there is that saying, "tubong lugaw".
The tofu, the perfect partner for arrozcaldo, is a box office as well! The sauce taste so good that you would want to drink it up instead of pouring over the fried tofu. The sour, sweet and salty blend is just perfect. The burp even smells like the sauce! LOL! Indeed, its a Combolicious!
And we pray for those who were deeply affected by the disaster. I pray for their families, to be always intact, to be the tower of strength for each other. I hope that no matter what happens, they keep their faith in their hearts. This is a chance for us to be stronger, and a chance to be generous and Good Samaritans.
