I just want to show our very pretty Ensaladang Talong. It is a very common and simple dish. All you have to do is grill the eggplant, slice some tomatoes, white onions and green mango, then add some sauteed shrimp paste (bagoong alamang). Its so pretty til now I can't help but be fascinated how I did it. =D
My nephew Gab, did all the slicing. I made him choose between looking after our little baby or do the slicing. Haha! He'd rather do the slicing with my supervision. I asked him to use our grater for vegetables for the mangoes, to make his task easier and faster to accomplish. Look how fine the mango strips are. =)
They look so pretty after I plate them altogether. =) I placed the eggplant on the bottom, then the tomatoes and onions, then all the mangoes and a little bit more of tomatoes and onions on top. And, voila! And guess what is the perfect partner for this ensalada?
